The Hells Canyon is the big brother of our first fixed-blade knife, the Hell Gap (see what we did there?). We designed the Hells Canyon with the help of chef, athlete, entrepreneur, author and Top Chef Masters® winner Chris Cosentino, who requires a knife that is fully capable in all conditions and environments. We took our design sensibilities and premium everyday-carry materials and combined them with the design of a more traditional chef's knife. The result is the ultimate outdoor cooking knife: supremely versatile, durable and functional, no matter what situation you find yourself in.

Fed a whole crowd

So I went camping over the weekend, it was 12 of us. I challenged myself to take my Hells Canyon as the only knife. I was able to cook all of the meals, deserts included with this knife. I didn´t have to sharpen it again for the whole trip so thats a huge bonus. I trimed a whole brisket, chopped onions, herbs and a bunch of other stuff. Still sharp AF. This is the perfect outdoor cooking knife.

I almost had to keep it...

Bought this as a gift for my brother-in-law... and almost kept it. Beautiful craftsmanship, sturdy build... Just awesome. All the dudes in my life got James knives for Xmas this year and they were all super stoked! After all that, I'm left itching to add another James to my collection....

A true travel chef's knife with perfect handling

This knife perfectly fits in where I need it to. Its smaller than my 8'' Chef's knife and also allows me to carry it in my pocket for quick paring and smaller prep tasks. I love the rounded spine that is really comfortable when you need to push down on a harder cut. Just feels great in my hand all around. I removed the cord from the knife waiting on a titanium bead to add to it. Also, the kydex sheath is grippy, but not so much that its difficult to remove. Perfect resistance in my opinion.

If you are a chef that can't stand using bad knives at other peoples houses, or preps fun meals outside of your home this knife is perfect. My only complaint is the price, just a bit high when you are comparing it to top of the line chefs knives from Shun and others. perhaps closer to 200 is the sweet spot for this. Though, getting a USA made product with this much attention to detail and love made me pull the trigger. This knife will join my chapter tanto, and my ellis. We will be highlighting James on our podcast for all the incredible knives they are producing.

What a knife.

When I opened the box all I could say was wow. The presentation is nearly perfect and the knife itself is impeccable. Clean and well thought out.

I’m a bit skeptical on the sheath. Thin Kydex and does not “click” when seating the knife within. Could have done a bit more on this, especially given this is marketed as an “outdoor” chef’s knife. Not sure I’d attach this to my belt or bag using this sheath.

The blade is also a bit thin but admittedly, I’ve not used the knife yet so it could pose no issue at all.

If you’re looking for a 3rd tool (e.g. bushcraft knife, small axe and then this item) for your outdoor pursuits then I think this is worth considering but you could probably do better for the same blade material in other options.

All around looks like a solid knife and is sharp as hell.
